This is the first installment of our springtime dinner series.  Springtime brings a delightful array of fresh ingredients, and there are plenty of delicious dinner options to choose from. Here is the first of our popular spring dinner ideas that you can prepare quickly:

Easy Stuffed Poblanos:

These saucy stuffed peppers are a big hit.  If you want to avoid the “heat”, substitute green bell peppers for the poblanos. Top them with sour cream and your favorite salsa for a flavorful meal.

  • 1/2 pound lean ground beef
  • 1/2 pound Italian turkey (if using sausage links, remove the casing)
  • 1 package (8.8 ounces) ready-to-serve Spanish rice
  • 4 large poblano peppers
  • 1 cup enchilada sauce
  • 1/2 cup shredded Mexican cheese blend
  • (Optional toppings) Minced fresh cilantro; sour cream; salsa
  1. Preheat broiler. In a large skillet, cook turkey and beef over medium heat until no longer pink, (5-7 minutes), breaking meat into crumbles; drain.
  2. Prepare rice according to package directions. Add rice to meat mixture.
  3. Cut peppers lengthwise in half; remove seeds. Place on a foil-lined 15” x 10” baking pan, cut side down.
  4. Broil on the top oven rack until skins blister, about 5 minutes.
  5. Remove the peppers from the oven and with tongs, carefully flip over them over, then fill with the turkey/beef/rice mixture. Top with enchilada sauce and sprinkle with cheese.
  6. Broil again until cheese is melted, (1-2 additional minutes). If desired, top with cilantro, sour cream, and/or salsa.
